Gluten+Dairy Free Almond Cookies

Can it be? I didn’t even know this was possible!

I have been living gluten and dairy free for almost two years now, and have been searching and searching for a good “from-scratch” cookie recipe that wouldn’t make me sick after I ate it. There’s a bunch of yummy-tasting pre-packaged gluten+dairy free cookie mixes out there that you can buy from the store, but I wanted something that I could make myself…without the added sugar and unknown ingredients that sometimes come along with the packaged stuff. After several Pinterest searches, recipe ideas, experiments, and taste-tests, I can finally give you this. 

Behold, a delicious, chewy, secretly-good-for-you cookie! Free of gluten, dairy, eggs, and added sugar. These babies are SO tasty, super easy to make, require only 7 wholesome ingredients, and are perfectly healthy, so you won’t have to feel guilty after eating one or two (or five….hey, it happens)

Even my non-gluten/dairy intolerant family members loved them (SCORE!)

All you need is 15 minutes, some almond flour, coconut oil, honey, and dark chocolate if you’re feelin’ it! Prepare to be blown away into a secretly-healthy cookie heaven.



  • 2 cups almond flour (I recommend this brand)
  • 1/2 tsp. baking soda
  • 1/4 tsp. fine ground sea salt
  • 6 Tbsp. local honey
  • 4 tsp. coconut oil, melted
  • 2 tsp. vanilla extract
  • Optional add-ins: 1/3 cup dark chocolate chips, shredded coconut, raisins, nuts, or anything else your heart desires to put inside of a cookie.


  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking soda and salt. Set aside.
  3. In a smaller bowl, mix together honey, vanilla extract, and coconut oil.
  4. Pour wet ingredients into the almond flour mixture, and stir well to combine. If using additions like chocolate chips or coconut, stir in now.
  5. Roll dough into heaping tablespoon-sized balls, then gently flatten between your hands, to form a round disk shape. Place onto prepared baking sheet and repeat with remaining dough.
  6. Bake for 8-10 minutes, until golden brown. The cookies will be quite fragile when first removed from oven, so allow to cool for a few minutes before transferring to your mouth a serving plate.


Give these cookies a try, and you’ll see…nobody will be able to keep their hands off them! My little brother can testify to that^


Everything You Need To Know To Get Free Stickers From Your Favorite Preppy Brands.

Stickers. I love stickers…so much so that I actually have a sticker collection, no lie.

As it turns out, I’m not the only one who has a secret (or not-so secret) obsession with stickers. Nowadays they have grown to be very popular…people put stickers on their water bottles, notebook covers, laptops, phone cases, iPad cases, you name it! And with companies making so many cute ones now, it’s easy to see why!

Many companies have stickers on their website for purchase, but you’d be surprised at how many places are happy to send out a couple free stickers to you for no charge! If you want to start your own collection, there are three common ways you can go about it: Emailing the company, sending a SASE (Self Addressed Stamped Envelope), or filling out a sticker request form on their website.

#1) How to email companies to request your free stickers: Below is a list of several places that I have emailed to got free stickers:

All you have to do is send them a quick email expressing how much you enjoy their company, and politely request some free stickers!

Here is an example of what you should say:

#3) How to Send A SASE (Self Addressed Stamped Envelope): This one requires a little more effort, and you have to pay for the stamp, but it’s worth it!

You need two different sized envelopes, one slightly larger than the other, so that the smaller one fits inside of the large.

  1. Fill out the larger-sized envelope with the address of the company (see list below) and your return address. Make sure you put a stamp on it!
  2. Address the smaller envelope to yourself, stamp it, and place it inside of the large one.
  3. Mail it off and wait for the magic (aka fun stickers) to come back to you!

My Favorite Dried Fruit & Nut Trail Mix

Confession #1: I love nuts. Almost every nut, I like to eat. Almonds? Delish. Cashews? Love. Pecans? Toast ’em and I’m there. Now, I’m a little picky about the way my nuts have to be (dry roasted or raw only please! No oils or any of that “fancy” added stuff needed), but if it’s right, I could eat certain nuts all day.

Confession #2: I love dried fruit. I’m a huge fan of dried cranberries, raisins, and banana chips, as long as you ditch the added sugar.

Confession #3: I have a special concauxion of both my loves: nuts and dried fruit, in the form of a super yummy, + super healthy trail mix. 

Bam…there it is. I could eat this stuff every day to be honest. Actually, I do eat it every day… Peace, love, fruit, and healthy fats. That’s all I have to say about that…

This trail mix is so quick, easy, and delicious! No more reasons to just grab a candy bar or bag of chips, when you can just grab a handful this…real, energizing food for the win! 

Today, I’m going to share my special recipe with you.


Energizing Dried Fruit and Nut Trail Mix:

  • 1 1/2 cups organic sweetened banana chips
  • 1 cup organic raisins
  • 1 cup diced dried pineapple
  • 1 cup dried organic cranberries
  • 1 cup organic dry roasted peanuts
  • 1 1/4 cup organic dry roasted almonds
  • 1 1/4 cup organic dry roasted cashews


  1. Combine all ingredients in a large bowl and stir to combine.
  2. Transfer to a container for storing.

 *Note: I prefer to get my ingredients from the organic bulk selection at my local grocery store, but it’s up to you where you get yours. You can also customize this recipe to your preference of the “style” of nut. Do you like dry roasted nuts like me? Raw? Toasted? Roasted? You can choose!

Honestly Yummy: Lick Ice Creams

On Saturday my sister and I spent the day in Austin with our Aunt and Uncle, and we came upon a new ice cream shop: Lick.

Lick is a company committed to making the delicious ice cream we all know and love, without all the artificial colors or flavors, preservatives, high fructose corn syrup, or additives that we don’t love as much. They only use real, honest ingredients, from local family-owned dairy farms, while still delivering amazing, creamy, and delicious flavor! Lick also makes dairy free and/or vegan flavors as well, which is a great bonus!

They have such adorable, trendy decor…I was immediately attracted to the bright colors and fun lighting! And all of their flavors are so different. Whether you’re feeling classic, adventurous, or somewhere in the middle, with flavors like Milk Chocolate, Roasted Beets and Fresh Mint, and Texas Sheet Cake, there’s something at Lick for everyone!

  I got the dairy free “Tart Toasted Coconut” flavor, and it was TO DIE FOR. So yummy. Soso yummy.
